½ cup olive oil 1 tbsp balsamic vinegar ½ tsp Dijon mustard ½ tsp honey Salt & pepper 100g Mache 1 firm but ripe pear (sliced thinly) 1 apple (sliced thinly) ¼ cup cranberries ¼ cup toasted hazelnuts, coarsely chopped ¼ cup crumbled feta Salt & Pepper
Method
To make the vinaigrette, in a small bowl, whisk together the olive oil, vinegar, mustard, honey and salt and pepper to taste.
In a large bowl, combine the mache, pears, apples, cranberries and hazelnuts. Pour the vinaigrette over the salad and toss gently.
Sprinkle with feta and season with salt and pepper.
