¼ cup sweet chili sauce 2 tbs soy sauce 2 tbs oyster sauce 2 tbs olive oil 600g rump steak, thinly sliced 1 red onion, cut into thin wedg 2 garlic cloves, crushed 1 bunch of sweet baby broccoli 450g pkt microwavable jasmine rice 80g snow peas, trimmed ¾ cup cashews, toasted, chopped
Method
Combine the sweet chili sauce, soy sauce and oyster sauce in a small jug.
Heat 2 tsp of the oil in a large frying pan over high heat. Stir-fry half of the beef for 2-3 minutes or until brown. Repeat with 2 tsp of the oil and remaining beef.
Heat the remaining oil in the pan. Add the onion. Stir fry for 2 minutes. Add the garlic and baby broccoli. Stir fry for 2 minutes or until tender.
Meanwhile, heat the rice according to packet instructions.
Return the beef to the pan with the snow peas, cashews and soy sauce mixture. Stir fry for 1-2 minutes or until heated through and well combined. Serve with the rice.
